Smoked ham hock and guanciale

Slow-cooked smoked ham hock and guanciale with sauerkraut, peas, and gravy

It’s cold. The sky is clear and blue. I’m cold to the bone.

Comfort food seemed in order.

I put a smoked ham hock and a lump of guanciale into the slow cooker with some water, vinegar, salt, and whole peppercorns.

After six hours, I had an amazing meal which warmed my bones.

In further good news, the Dolphins defeated the Warriors this afternoon. That’s eight wins in a row. I kept warm in my Dolphins Oodie.

Thank you, Brother. Yes, I think some diced spam which has been tossed in a hot pan to make them crispy would have added another flavour and texture.

I am glad the Dolphins are performing well and you are enjoying their games. Such a flavour burst with the hock and guanciale combined, a lovely, tasty blend. You often create unique dishes and this one is splendid for winter. Buon appetito Gary!

Thanks, Merryn. I am quietly happy with the way the Dolphins are playing, I’m not getting my hopes up too much yet. It’s a long season.
The hock and guanciale were delightful together and I enjoyed the saltiness.

Congratulations on your Dolphins! I did my celebrating yesterday with the Socceroos and could have hugged the smiling and laughing Tony Popovic! Now how do we send the Egyptians home in a week :) ? Like how you cooked your hock and ham . . . especially since I could see the peas alongside . . . oh, put a jumper on, turn your heat up and go for a fun run before you watch any screens . . . :) ! My AC is on 23C and I feel fine . . .
