Beef brisket and roast pumpkin

·

Slow-cooked beef brisket leftovers, served with roast pumpkin and rye sourdough bread spread with cultured butter

I wasn’t sure what to cook today. During the week, I thought about another pumpkin soup, this time with a ham hock and bacon.

I woke up this morning and didn’t feel like cooking and eating pork.

I still had some brisket in the fridge after I had slowly cooked a large piece last Sunday, and I’ve been enjoying it throughout the week.

I also had some leftover pumpkin from last week.

In a lazy mood, I thought I’d just reheat the brisket and cook the pumpkin in the Weber Q+.

I went for a wander in town today and, at the market, bought some cultured butter and rye sourdough bread.

Tonight’s dinner was simply beef, pumpkin, rye sourdough bread, and cultured butter. It was simple and delicious.

I got sent a couple of photographs from when I spoke at a conference a few weeks ago in Melbourne.

Fine sounding meal, some of our best come from earlier in the week. You look very comfortable and professional at the podium.

Well done Gary on the speech! I dislike doing speeches but I do like being part of panel discussions :)

Thanks, Lorraine, panels can be fun, especially if the questions are straight forward.

Good evening, dear Sir! Very much like all you have put on your plate today . . . no arguments! Would you enlighten us as to the raison d’etre for the Melbourne conference . . . with my rather insufficient vision I can see the ‘engage’ and ‘enlighten’ verbiage but even the names of the sponsors and supporters leave me behind the eight-ball . . . ? And – I honestly do not think you need AI created faces > you seem to ‘scrub up’ very well indeed :) !

Thanks, Eha. I was speaking at the National Association of Testing Authorities, Australia’s annual conference. I was speaking about the role and importance of accreditation in public health.

Gary- thanks! Tho’ obviously needed if one thinks about it for a nanosecond – I knew nought about the existence of such. Glad I asked. I have already had my bot tell me the basics and I’ll go back and learn a tad tomorrow. Good I did ask!!! Would love to learn a bit about the public health side of it in Australia. Have a good night . . . I’m off to Glasgow in a minute . . . naturally :) !!!

2pm Sunday – have reached the Conference – had absolutely no idea of the size and those attending. Hugely interesting to see who is involved! Very silly question – there is no way an ‘ordinary Australian’ can hear your talk – is there?

Thanks, Eha. I don’t believe the recordings are publicly available.

Looks like a pretty tasty meal.

Conferences … haven’t attended one in decades. I think the last one was in Denver.

I used to attend a lot of them. This one was the first time in many years.

I used to be nervous at public speaking but after 20 plus years of substitute teaching in the public high school system, you get over it, eventually.

It’s nice to be able to talk to colleagues in your field.
